Spicy Beef and Rice with Vegetables: Easy Recipe

As a busy, working mum, I try to make meals that are quick, easy, and nutritious. This spicy beef and rice dish is a popular option in our house as it has just enough spice to make it tasty, but not so much that the children can’t enjoy their meal.

This is a crowd-pleasing meal that I can rustle together in under half an hour. Another reason I like to make this dish is that it gives my children several portions of their daily fruit and vegetable quota in one go.

It is easy to adapt this recipe to suit your own tastes by adding or taking away ingredients. See our additional tips at the end of the recipe, or simply get creative. You can also replace the rice with your favourite type of noodles.

I used a bit of a cheat when making this dish as I used pre-cooked packets of rice. This is just a time-saving strategy for me, and it means the rice is always cooked perfectly! Feel free to cook your rice yourself.

An easy recipe for a Chinese-inspired dish of spicy beef and rice with vegetables, that you can adapt to your own tastes.

Ingredients for the Spicy Beef and Rice with Vegetables

  • 2 rump steaks (approximately 500 g)

  • 3 200g packets of cooked rice

  • 2 bell peppers, any colour

  • 1 red onion

  • 2 carrots, grated

  • 1/4 spring cabbage, shredded

  • 200g mushrooms

  • 150 g beansprouts

  • 4 tsp. extra virgin olive oil

  • 3 cloves garlic, crushed or grated

  • 1-inch ginger, grated

  • 3 chillies, any colour

  • 4 tbsp. dark soy sauce

  • 1 tsp. paprika

  • 1 tsp. chilli powder

  • Salt and black pepper to taste

Directions: How to Make the Spicy Beef with Rice and Vegetables

  • Take the steaks out of the refrigerator 20 minutes before cooking to get to room temperature.
  • Drizzle 1 tsp olive oil over each steak, then season with salt and pepper.
  • Rub the oil and seasoning into both sides of the meat.
  • Thinly slice the peppers, onions, and mushrooms using a mandoline.
  • Put a griddle pan and a frying pan or wok on the hob, both over high heat.
  • Add 2 teaspoons of olive oil to the frying pan.
  • When the griddle is hot, add the steaks.
  • At the same time, add the peppers, onions, and mushrooms to the frying pan, then turn down to medium heat.
  • Next, add the grated carrot and shredded cabbage.
  • After 3 minutes, flip the steaks to cook for a further 3 minutes on the other side.
  • Meanwhile, chop your chillies and grate your ginger and garlic. Then, add all three ingredients to the frying pan with the onions, peppers, and mushroom.
  • Remove the steaks from the griddle and put on a plate to rest.
  • Heat the packs of rice in the microwave according to the instructions- usually 2 minutes.
  • Thinly slice the steaks into strips. If they are too pink, return the strip to the griddle for a minute or two, then add to the frying pan with the other ingredients.
  • Also, add the rice to the frying pan.
  • Drizzle over the chilli powder, paprika, and dark soy sauce.
  • Toss in the beansprouts.
  • Mix all the ingredients together.
  • Season with salt and pepper.
  • Turn the heat down to low and cook for a further 5 minutes.
  • Serve in bowls or on plates.

Additional Tips

  • Spice levels: Adjust the levels of spice to suit your own taste.
  • Save money: You can make this recipe just as easily with a cheaper cut of beef, such as braising steak or diced beef.
  • Extra flavour: Add the juices from the steak to the dish for extra flavour.
  • Add ingredients: You can add any type of vegetables you like to this recipe. Carrots and peas are colourful and nutritious options.
  • Switch the meat: If you are not a fan of beef, switch this ingredient to chicken, pork, or lamb.
  • Vegetarian: You can transform this into a vegetarian/ vegan dish simply by omitting the meat.
  • Healthy tip: Soy sauce is quite a salty flavour, so you can omit the salt from the recipe if you are watching your sodium intake.
