Our Sticky Toffee Pudding Recipe
Our recipe is based on one written by British cook and television personality Nigella Lawson. At The Fruity Tart, we have made a couple of adaptions to her version, as some of the ingredients chosen by Lawson are not widely available or expensive for many shoppers. However, the basic concept and method remain the same. We have kept things as simple as possible to make the puddings accessible to all skill levels. One of the most classic and traditional desserts is sticky toffee pudding, and here is our recipe for the puddings.
Ingredients for Sticky Toffee Pudding
150 g plain flour
75 g butter (plus extra for greasing)
200 ml boiling water
200 g pitted and chopped dates
50g dark brown sugar
2 tbsp. black treacle
2 large eggs
1 tsp. bicarbonate soda
2 tsp. baking powder

300 g dark brown sugar
200 ml double cream
150 g butter
2 tbsp black treacle
Directions: How to Make Sticky Toffee Puddings
- Preheat the oven to 180C/ 350F (160C fan oven).
- Decide whether to make a tray bake sticky toffee pudding or individual puddings. Based on your decision, use butter to grease either two muffin tins or a 9-inch square baking dish.
- Put the chopped dates in a bowl, sprinkle over the bicarbonate of soda, then cover with the boiling water. Leave to soak for ten minutes while you make the pudding batter.
- Cream the butter and black treacle using a wooden spoon or a mixer.
- Next, add the sugar and cream again until there are no lumps.
- Beat in one of the eggs until fully mixed into the mixture, then repeat with the second egg.
- Slowly sieve in the baking powder and flour, continuously stirring until you have a thick batter.
- Take a fork a press down on the soaking dates a little before adding the dates and juices to the batter mixture.
- Transfer the mixture to the baking tray, or spoon it into the muffin tins.
- Put the trays into the oven and cook for 30-35 minutes.
- How to Make the Toffee Sauce for the Puddings
- You can make the toffee sauce for your sticky toffee puddings while the puddings bake in the oven.
- Put the butter, treacle, and sugar in a pan on low heat on the hob.
- Cook until all the ingredients are melted, stirring the mixture occasionally.
- Once the ingredients have melted, add the double cream to the pan and stir.
- Turn up the heat and cook the sauce until it begins to bubble, then immediately remove it from the heat.
- Spoon some of the toffee sauce over your puddings so that it soaks into the sponge.
- Save the extra sauce until you are ready to serve your sticky toffee pudding.
Additional Tips
- You can store the sticky toffee pudding in the refrigerator for up to five days, and it is also suitable for home freezing.
- To reheat the sticky toffee pudding, cook it in the microwave for 40 seconds to one minute until it is warm.
- It is best to warm the toffee sauce separately in a pan over low heat for a few minutes.
- Try adding some chopped dates for texture in the puddings.
