We have been trying to reduce our red meat intake, so we have eaten more vegetarian dishes and meals featuring fish and seafood recently. An easy-to-cook and tasty option is sea bass, and two of the simplest ways to cook this fish are to pan-fry it or bake it in the oven. We chose, on this occasion, to make baked sea bass, as you can leave it to cook and then get on with preparing the accompaniments. It is so easy to make, yet the simple preparation of the fish allows its flavour to shine.
It is worth noting that sea bass skin does not crisp as well as the skin of some other fish, so we normally remove the skin before serving. You can ask your fishmonger to skin the fish, skin it yourself, or remove the skin after baking. If you do not mind soft fish skin, feel free to leave it on.
We served our sea bass with herb potatoes for their flavour and crispy texture. As a second accompaniment, we also served the sea bass with carrots, as they are a vegetable we always have at home. A simple recipe for baked sea bass served with herb potatoes and seasonal vegetables.
Ingredients for Baked Sea Bass with Herb Potatoes
4 sea bass fillets, approximately 100g each
4 large potatoes, cut into large chunks
1 lemon
1 oz butter
4 tbsp vegetable oil
1 tsp dried rosemary
1 tsp dried thyme
Salt and pepper to season
Directions: How to Make Baked Sea Bass with Herb Potatoes
- Preheat the oven to 220C/200C fan/gas 7.
- Dice the potatoes into large chunks, peeling first if you prefer. We leave the skin on if the potatoes have smooth, clean skins.
- Spread the potatoes across a baking tray, drizzle over the oil, sprinkle with the dried rosemary and thyme, and season with salt.
- Massage the oil and other ingredients into the potatoes so they are all coated.
- Cook the potatoes for 20 minutes, turning once to achieve an even golden colour and crispy edges.
- While the potatoes are cooking, place each of the sea bass fillets onto a square of cooking foil.
- Dice the butter into small cubes and sprinkle over the fish.
- Add a slice of lemon to each of the sea bass fillets, then season with salt and pepper.
- Create a pocket from the cooking foil for each of the fillets, so they are completely covered and no steam can escape.
- Put the foil-covered sea bass onto a baking tray and put it into the oven. It makes sense to use the time the oven door is open to turn the potatoes.
- Cook the baked sea bass for approximately seven minutes before removing it from the oven.
- Carefully open the cooking foil so the steam can escape.
- Serve the baked sea bass with the herb potatoes and the vegetables of your choice. Garnish the fish with the slice of lemon with which it was cooked.
Additional Tips
- Try using dried basil and oregano instead of rosemary and thyme for a Mediterranean twist.
- If you do not like cooked lemon due to the intense flavour, add a slice of fresh lemon after you have baked the sea bass.
