Beef and Cashews with Spicy Noodles: Easy Chinese Recipe

We love experimenting with Asian flavours and trying dishes from across the East. Now, we have a bit of a thing for noodles, especially with chilli and other spices. One of our favourite dishes to eat is beef and cashews with spicy noodles, which is a traditional dish in Chinese cookery.

Not only is it delicious, but it also has various textures, which adds to the eating experience. Furthermore, it is a quick and easy tea to make after a long day at work, and it is easy to adapt to what you have in the refrigerator.

You can make the dish with almost any cut of beef if you slice it thinly. However, we prefer to use marinated rump or sirloin steak that we griddle and slice before adding it to the other ingredients. The sear adds to the flavour of the dish.

It is also easy to adapt the vegetables in the recipe. Typically, we use carrots, spring onions, and sliced peppers. Other vegetables you can use for flavour, colour, and texture include peas, green beans, thinly sliced cabbage, or mange tout. Switch the vegetables for what you have in at home or to suit your personal tastes.

The spices and flavourings in the beef and cashews recipe are typical of Chinese cuisine and also of other cuisines elsewhere in Asia. Most of the flavour comes from chillies, soy sauce, ginger, and garlic. We also add a little sesame oil, although this is an optional ingredient if you have it available. An easy recipe for beef and cashews with spicy noodles, an Asian-inspired dish packed full of flavour.

Ingredients for the Beef and Cashews with Spicy Noodles

  • Ingredients for the Steak
  • 2 sirloin or rump steaks

  • 2 tbsp soy sauce

  • 1 tbsp olive oil

  • Salt and freshly ground black pepper

  • Ingredients for the Vegetables and Noodles
  • 300g medium egg noodles

  • 100 g salted cashews (retain some

  • 1 large carrots, julienned (finely sliced sticks)

  • A regular red pepper, finely sliced

  • 6 spring onions, trimmed and sliced

  • 3 chillies, thinly sliced (two for in the vegetables and one for garnish)

  • 2-inch piece of ginger, minced

  • 3 garlic cloves, minced

  • 2 tbsp soy sauce

  • 1 tbsp olive oil

  • 1 tsp sesame oil (optional)

Directions: How to Make the Beef and Cashews with Spicy Noodles

  • Season the steak with salt and pepper, and drizzle with the soy sauce and a tablespoon of olive oil.
  • Rub the ingredients over the meat to make sure it is completely covered.
  • Prepare all your vegetables and flavourings.
  • Put a pot of water over high heat on the hob so that it will boil by the time you add the noodles.
  • Put a griddle pan or frying pan on the hob over medium-high, then add the steaks. Cook on one side for five minutes.
  • While the steak is cooking, put a wok or large frying pan over medium-high heat on the hob and add the olive oil and sesame oil (if using), then add the vegetables and cashew nuts. Retain some nuts for the garnish.
  • Cook the vegetables for a couple of minutes, then stir in the garlic, chillies, ginger, and soy sauce. Retain some chillies for the garnish.
  • Turn down the heat to medium, add three tablespoons of water, and cover the pan with a lid so the vegetables will steam.
  • Turn over the steaks and cook for another three minutes. You need the steaks to cook to rare or medium-rare, as they will continue to cook a little when you add the meat to the vegetables.
  • Put the noodles in the boiling water to cook for approximately five minutes (check the instructions on the pack).
  • Remove the steaks from the pan and leave to rest for five minutes.
  • When the noodles are cooked, drain them, check that the vegetables are al dente, and add the noodles to the pan with the vegetables.
  • Remove the fat from the steaks and slice them into 0.5 cm slices, then add to the pan with the noodles and vegetables.
  • Cook for a few minutes, just until the meat is warmed through, then serve into bowls or onto plates.
  • Add a garnish of chopped cashews and sliced chillies.

Additional Tips

  • If you do not like too much heat, then reduce the chillies and leave off the chilli garnish.
  • Not a fan of medium-rare steak? Simply cook the steak a little longer. Likewise, if you want your steak rare, reduce the cooking time.
