Mushroom Stroganoff Recipe: Easy Vegetarian

A tasty vegetarian meal to make, even if you are not a vegetarian, is mushroom stroganoff, which is the vegetarian version of the popular Russian dish beef stroganoff. It is quick, easy, budget-friendly, and delicious. There are countless recipes for mushroom stroganoff, each with something a little different in the list of ingredients. We have perfected our own mushroom stroganoff recipe for this dish using items that most people have at home or that are readily available from most stores.

Our version includes button mushrooms, as these are readily available and delicious. However, you can use the mushrooms of your choice. An alternative we recommend to achieve good flavour and texture in the dish is chestnut mushrooms.

The main ingredients that add flavour to The Fruity Tart’s version of the dish are sweet paprika, garlic, parsley, and two varieties of mustard. We chose to use both English and wholegrain mustard as they have different flavour profiles that each contribute something to the dish. While English mustard is smooth, wholegrain mustard also adds some texture. You can use only one variety or even choose a different type of mustard if you prefer. Here is our easy mushroom stroganoff recipe for you to try.

Ingredients for the Mushroom Stroganoff Recipe

  • 300g button or chestnut mushrooms sliced

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 5 tbsp soured cream

  • 150 ml beef or vegetable stock

  • 1 heaped tsp English mustard

  • 1 heaped tsp wholegrain mustard

  • 3 cloves of garlic

  • 1 tsp sweet paprika

  • 1 tsp dried parsley or a small bunch of fresh parsley chopped

Directions: How to Make the Mushroom Stroganoff Recipe

  • Chop the onions, mushrooms, and garlic.
  • Heat the olive oil in a large pan over a medium-high hob.
  • Add the onions and cook for two minutes until they start to soften and brown.
  • Then, add the sliced mushrooms to the pan and cook for five minutes, stirring once halfway through.
  • Add the chopped garlic and paprika to the pan and stir before cooking for another two minutes.
  • Pour the beef or vegetable stock over the mixture and turn up the heat to bring to a boil.
  • Remove the pan from the heat, then stir the soured cream, English mustard, and wholegrain mustard into the mixture.
  • Add the chopped parsley and season with salt and black pepper before stirring again.
  • Seve the mushroom stroganoff with rice, pasta, or vegetables.

Additional Tips

  • Use vegetable stock rather than beef stock if you want a vegetarian meal.
  • Add a teaspoon of Worcestershire sauce to give the mushroom stroganoff recipe an extra kick.
If you are not a fan of soured cream, replace this ingredient with 200ml double cream.
  • Try adding a splash of brandy to the pan before adding the liquid ingredients, as it is an ingredient people often use in a traditional beef stroganoff.
  • Cut out the salt for a reduced sodium diet.
  • Replace the soured cream with a reduced-fat version to reduce the calorie value and fat content.
