- 1 oz/ 25 g butter
- 1 oz/ 25 g plain flour
- 3 oz/ 80 g cheese
- 600 ml/ 1-pint milk
- White pepper and salt
How to Make a Cheese Sauce Recipe
- Measure your ingredients first.
- Melt the butter in a pan over low heat.
- Sieve the flour into the melted butter and stir.
- Cook for two minutes.
- Remove the pan from the heat and add the milk a little at a time continuously stirring until you have created a smooth sauce.
- Season with the salt and white pepper.
- Simmer gently over low heat for approximately eight minutes.
- Remove from the heat and stir in the grated cheese until the cheese is melted.
TIPS
- Cheese- I use mature cheddar cheese as it has a good consistency and the perfect flavour for a sauce. Good alternatives are gruyere or Gouda.
- Add mustard or garlic– Adding a teaspoon of mustard to this sauce gives it extra flavour. Alternatively, you can try adding some crushed garlic.
- Using the sauce– You can use this sauce for multiple purposes. Some examples include cauliflower cheese, broccoli and cauliflower gratin, potatoes baked in cheese, and as a basis for a bechamel sauce to use in a lasagne. You can also use it for macaroni cheese and many other pasta dishes.
